A big favourite in our house is Fasolakia (Greek for green beans)...
It's a traditional recipe made with olive oil (hence it falls into the category in Greece known as "ladera") and is made in one pot, which makes it even more appealing!
1 kg green beans, trimmed
3/4 of a cup olive oil (preferably Greek of course!)
2 small onions, chopped
1 clove of garlic, grated
750g ripe tomatoes, grated or 2 large tins crushed tomatoes
4 potatoes cut into wedges
a pinch of sugar
dried oregano
large handfull of fresh chopped parsley
chopped dill
salt and freshly ground pepper
Method:
Heat oil in a large saucepan or casserole and cook onions, garlic, oregano for about six minutes
Add tomatoes and sugar and cook for a further 10 minutes
Add tomatoes and sugar and cook for a further 10 minutes
Add potatoes and mix through
Add beans, parsley, salt and pepper and cover with water
Cover and cook for about half an hour until the potatoes are cooked through and the liquid reduced
Add dill to taste
Serve immediately with lashings of feta on top and crusty bread.
